Sashimi Don

The simplest dish on the plan — and the first one to make. Sashimi-grade salmon over seasoned rice, dressed with white soy sauce and sesame. No heat required. Eat it the day you shop, while the fish is at its best.

Ingredients

  • Sashimi-grade salmon fillet

  • Japanese short-grain rice

  • Sushi rice vinegar

  • White soy sauce

  • Sesame oil

  • Sesame seeds

  • Nori

  • Spring onions

  • Daikon

How To

  1. Season warm short-grain rice with sushi vinegar and a pinch of salt.

  2. Slice cold salmon straight from the fridge.

  3. Lay over the rice just before serving.

  4. Dress with white soy sauce and a few drops of sesame oil.

  5. Sprinkle sesame seeds just before serving.

Tips & Tricks

Use white soy sauce instead of regular — it seasons without overpowering the clean flavour of the fish.

Cook and season the rice the night before. Reheat gently with a splash of water. Slice the salmon cold and fresh just before serving — never in advance.
