The simplest dish on the plan — and the first one to make. Sashimi-grade salmon over seasoned rice, dressed with white soy sauce and sesame. No heat required. Eat it the day you shop, while the fish is at its best.
Ingredients
Sashimi-grade salmon fillet
Japanese short-grain rice
Sushi rice vinegar
White soy sauce
Sesame oil
Sesame seeds
Nori
Spring onions
Daikon
How To
Season warm short-grain rice with sushi vinegar and a pinch of salt.
Slice cold salmon straight from the fridge.
Lay over the rice just before serving.
Dress with white soy sauce and a few drops of sesame oil.
Sprinkle sesame seeds just before serving.
Tips & Tricks
Use white soy sauce instead of regular — it seasons without overpowering the clean flavour of the fish.
Cook and season the rice the night before. Reheat gently with a splash of water. Slice the salmon cold and fresh just before serving — never in advance.
