Ingredients
Rigatoni
Tomato paste
Canned tomatoes
Heavy cream
Vodka (substitue option: white wine vinegar)
Chilli flakes
Garlic
Olive oil
Parmesan
How To
Bring a large pot of heavily salted water to a rolling boil. Drop in the pasta and cook until al dente
Cook garlic and chilli flakes gently in olive oil until fragrant
Add tomato paste and cook until it darkens slightly, deepening the flavour
Deglaze with vodka (or white wine vinegar as a substitute) and let it reduce
Stir in canned tomatoes and cream, season, and simmer until thickened
Toss cooked rigatoni through the sauce and finish with parmesan
Tips & Tricks
Sauce can be made a day ahead, reheat gently and add the pasta fresh.
No vodka in the pantry. The white wine vinegar left over from Salmon Week, you will still have that in hand.
